The Best Thanksgiving Side: Easy 5-Ingredient Baked Corn Pudding
Corn pudding, also known as corn casserole, is a delicious and easy Thanksgiving side dish that’s popular throughout the holiday season.
Growing up, my husband’s mom always made corn pudding for Thanksgiving dinner every year. To this day, it’s one of his favorite Thanksgiving sides.
Surprisingly, I had never heard of corn pudding until we started dating more than 20 years ago, but now this creamy and flavorful holiday recipe is on our Thanksgiving menu each year, too!
Easy to make, corn pudding is the perfect side dish to pair with all of the other Thanksgiving classics like mashed potatoes, stuffing, and green bean casserole.
Just throw all of the ingredients in a bowl, mix, and bake. That’s it! Corn pudding is also a great dish to make if you’re feeding a crowd. It’s easy to scale up the recipe, and it’s always a hit with everyone who tries it.
Ingredients For Easy Baked Corn Pudding
- 1 cup unsalted butter, melted
- 1 and 1/2 cups sour cream
- 1 (15 ounce) can creamed corn, undrained
- 1 (15 ounce) can whole kernel corn, undrained
- 2 boxes Jiffy cornbread mix
How To Make Corn Pudding
To begin, preheat your oven to 350 degrees℉ and grease a 9×13 inch baking dish. While your oven preheats, melt 1 cup of unsalted butter in a microwave-safe dish.
Once melted, pour the butter into a large mixing bowl. Then combine with 1 and 1/2 cups of sour cream, 1 can creamed corn, and 1 can whole kernel corn. It may seem counter intuitive, but do not drain your corn!
Next, add two boxes of Jiffy cornbread mix to the corn pudding mixture and stir until all the ingredients are well combined.
After everything is mixed, pour the mixture into your greased 9 x 13 baking dish and bake for 40-45 minutes, or until the corn pudding is set and the edges and top are golden brown.
Let the corn pudding cool for 10 minutes before serving, then dig in and enjoy!
How to Store Leftover Corn Pudding Casserole
To store leftover corn pudding, cover your baking dish with a lid or aluminum foil and keep the refrigerator for up to 3 days.
To reheat, simply microwave individual servings until heated through.

5-Ingredient Baked Corn Pudding
Ingredients
- 1 cup unsalted butter, melted
- 1 ½ cups sour cream
- 1 can creamed corn, undrained (15 ounces)
- 1 can whole kernel corn, undrained (15 ounces)
- 2 boxes Jiffy cornbread mix
Instructions
- Preheat your oven to 350℉ and grease a 9×13 baking pan.
- Melt butter in a microwave-safe bowl. Pour into a large mixing bowl and combine with the sour cream, creamed corn, and whole kernel corn. Do NOT drain the liquid off the corn. Stir to combine.
- Gently stir in both boxes of Jiffy cornbread mix into the corn pudding. Mix until well combined.
- Pour the corn pudding batter into a greased 9×13 baking pan and bake for 40-45 minutes or until golden brown and the center of the corn pudding is set.
- Let cool for 10 minutes before serving.
