Summer Berry Spinach Salad With Poppy Seed Dressing
If you’re looking for a healthy side dish or a light meal, summer berry spinach salad with poppy seed dressing checks all of the boxes.
This spinach salad is loaded with fresh, seasonal fruit. The sweet flavor of the berries is perfectly complemented by the rich and salty taste of feta cheese and the crunch of chopped walnuts.
Then top it off with a drizzle of some creamy poppy seed dressing, and you have summer salad heaven!
The brightly colored berries in the salad would add a fun and festive touch to your menu this 4th of July, too!
Ingredients for Summer Berry Spinach Salad With Poppy Seed Dressing
- 1 package (5 oz.) fresh spinach
- 1/2 cup fresh blueberries
- 1/2 carton (3 oz.) fresh raspberries
- 1/4 carton (4 oz.) fresh strawberries
- 3/4 cup feta cheese
- 1/2 cup walnuts, chopped
- poppy seed dressing
What Else Can You Add To Your Summer Berry Spinach Salad?
Toss in some protein. Chopped chicken, bits of bacon or even grilled shrimp make a great add-in.
Pile on the toppings. Do you love a loaded salad? Try adding other fruits and vegetables like chunks of apple, dried craisins, red onion, or avocado.
Go nuts. I love the crunch and extra flavor that nuts add to a dish. Plus, nuts are high in energy, and most are a good source of healthy unsaturated fats. If you’re a nut lover like me, try other varieties in your salad like sunflower seeds, almonds, pecans, or pine nuts.
Instructions for Summer Berry Spinach Salad With Poppy Seed Dressing
First, rinse all of your produce in a strainer and gently pat dry. Then, remove the stems from the strawberries and slice them into halves.
Add the spinach, blueberries, raspberries, sliced strawberries, feta cheese, and chopped walnuts to a large salad bowl.
Gently drizzle the salad with poppy seed dressing as desired. I used store-bought dressing, but if you prefer, you can easily make your own at home.
Then toss the salad to combine it and serve immediately.
And there you have it! A quick and delicious salad in less than 10 minutes.
Can You Make The Salad Ahead of Time?
You can prep the fruit in advance but do not mix the salad all together until just before serving.
The dressing can make the spinach a bit soggy if it sits for too long, so it is best when prepared and enjoyed fresh. You can store leftovers in the fridge in an airtight storage container for up to two days.
