Ingredients for Easy Sunrise Breakfast Burritos
- 1 pound ground pork sausage or turkey sausage, browned
- 1 pound thick-cut bacon, cooked and crumbled
- 1 20-ounce bag diced breakfast potatoes, thawed
- 1 red pepper, seeded and diced
- 1 green pepper, seeded and diced
- 2 tablespoons water
- 1 dozen large eggs
- 2 tablespoons vegetable oil
- 8 burrito-sized flour tortillas
- 1 cup shredded Mexican cheese blend
- Salt and pepper to taste

- Mixing bowls
- Sauté pan
- Rubber spatula
- Whisk
- Cutting board
- Paring knife
- Pepper corer
- Measuring cups

- Microwavable bacon grill

Instructions to Build Your Breakfast Burritos
Step 1: Prepare Your Bacon and Sausage
To start, cook your bacon in the microwave using a microwavable bacon grill, following the instructions on the package.
Blot off the excess grease, and once the bacon is cooled down, crumble it and set it aside.
For the sausage, heat a sauté pan on the stove over medium heat and cook your meat until it’s no longer pink.
Like the bacon, be sure to blot and drain off the excess grease.
Then set your sausage aside to cool in a bowl while preparing the vegetables.
Step 2: Sauté Your Vegetables
Next, wipe down your sauté pan and add two tablespoons of vegetable oil.
After the oil heats, add your thawed potatoes, season with some salt and pepper, and sauté for 10 minutes, or until the potatoes start to brown.
Then, add your diced green and red peppers and cook for an additional five minutes or until they are tender.
Once they are done, remove your vegetables from the heat so they don’t get overcooked.
Step 3: Scramble Your Eggs
Crack one dozen eggs into a large mixing bowl and use a whisk to beat in two tablespoons of water.
Pour the mixture into a clean skillet or sauté pan and scramble your eggs over medium-low heat until they are light and fluffy.
Step 3: Build Your Breakfast Burritos
To build your breakfast burritos, layer the scrambled eggs, potato mixture, and sausage or bacon on a flour tortilla shell.
Then sprinkle with cheese and tightly roll up the tortilla with the filling to create your burritos.
For a warm and delicious breakfast meal, throw those burritos on a baking sheet and pop them in the oven.
Turn your oven up to the “HI” broil setting, and in about five to seven minutes, you’ll have melty cheese and golden-brown tortilla shells.
Serve ’em up warm, top salsa, sour cream and your favorite burrito toppings and dig in!

I’m a big fan of the bacon burritos, while my husband, Kirk, loves the sausage.

- In a large mixing bowl, add the eggs and beat with water. Pour the mixture into a clean skillet. Scramble over medium-low heat until done.
- Build the burritos. Layer the scrambled eggs, potato mixture, and sausage or bacon on the flour tortilla shell. Sprinkle with cheese and roll up.
