Easy Pineapple Jalapeño Salsa
In the summertime, I love making fresh salsa at home.
But if you’re looking to whip up some salsa with a more tropical twist, this pineapple salsa with jalapeño is super easy and perfect for a summer luau party!
Of course, you don’t need to host a luau to make this salsa.
It’s great for dipping with crispy tortilla chips.
And it pairs perfectly with all your favorite summertime main dishes like grilled salmon, chicken, or pork.
(Oh…and it tastes great with tacos, and shredded chalupa, too!)
The sweet and spicy flavors combined taste ah-mazing.
But be warned…once you start to eat this salsa, you might not be able to stop!

- 1/2 cup diced yellow bell pepper
- 1/2 cup orange diced bell pepper
- 1 cup diced Roma tomatoes
- 1/4 cup finely chopped cilantro

Equipment Needed
How To Make Fresh Pineapple Jalapeño Salsa
(A quick note before we begin. I think fresh fruit tastes best for this pineapple salsa recipe, but if you’d like to save some time, canned pineapple will work too.)
Step 1: Prep the Pineapple
To make this spicy pineapple salsa, cut the top and the bottom off your pineapple.
Then cut the pineapple into two halves and carefully remove the core.
Once the core is removed, cut the pineapple into quarters and dice up 1 cup for the salsa recipe.
Then place the rest of the pineapple in an airtight food storage container and keep it in the fridge to eat later (or use it to make a second batch of jalapeno pineapple salsa).
Step 2: Dice the Remaining Veggies
Next, in a small serving bowl, mix the diced pineapple, 1 cup of diced Roma tomatoes, 1 cup of diced bell peppers, 1/4 cup of minced red onions, 1/4 cup of chopped cilantro, 2 tablespoons of diced jalapeño pepper, and 4 tablespoons of lime juice.
Stir until the pineapple and jalapeno salsa is well combined.
Step 3: Serve and Enjoy!
Once all of the ingredients have been added to the bowl, season your fresh pineapple salsa with salt, and pepper.
You can enjoy it right away, or place it in the fridge for 1-2 hours to flavor and chill before diving in.
Can I Make The Salsa Ahead Of Time?
I think the pineapple salsa is best when it’s served fresh the same day, but you can make it in advance and keep it in the fridge overnight.
To shorten prep time just dice and chop all the ingredients a day in advance.
Store them in separate containers in the fridge until serving.
This way, you can whip up the salsa in just a matter of minutes!
What Else Can I Add to My Pineapple Jalapeño Salsa
Looking to mix it up a bit? Try adding these other fresh ingredients to make this easy pineapple jalapeno salsa your own.
- Avocado
- Mango
- Black beans
- Roasted corn
- Red and green bell peppers
How to Store Leftover Pineapple Salsa
The salsa will keep well in the fridge for up to 5 days, so prep it ahead and pair it with your favorite Mexican dishes or simply enjoy it with crisp tortilla chips.
