Instructions for Easy Christmas Morning Quiche
Making the Crust
For this recipe, I used a frozen store-bought pie crust to save a little bit of time. If you choose to do this too, be sure to bake the pie crust per the directions on the packaging first. If you want to use a homemade crust, I recommend this recipe from Betty Crocker. It is light, flaky, and turns out perfect every time.
Making the Quiche
Once the pie crust is baked, set it aside to let it cool. (We’ll be coming back to it shortly.)
For the quiche, the first step is to adjust the oven temperature (if needed) and set it to 350℉. Next, in a medium-sized mixing bowl, add the eggs, half and half, salt, and pepper. Now, beat the mixture until it is light and fluffy.
After the egg mixture is prepared, place a large skillet on the stove over medium heat, and cook the bacon until it is crispy. (The crispier the better!) As soon as the bacon is fully cooked, remove the skillet from the heat. Place the bacon on a plate with paper towels to soak up any excess grease while it cools.
Meanwhile, wash and chop the fresh spinach. After that, chop the cooled bacon and sprinkle both in the bottom of the baked pie crust.
Ready for the Oven
Now comes the fun part! The first time I made this recipe, the egg mixture overflowed and I lost half of my quiche to the kitchen floor while trying to place it in the oven. Fail! To prevent the same fate with your quiche, here’s a little tip.
Tip #1: Place the pie crust in the oven before pouring in the egg mixture. It’s much easier, and it helps to prevent any spills!
Why didn’t I think of that the first time? Now that you know my secret, I’ll share two more tips. To make this step a bit more simple, place your pie crust on one of the lower level oven racks. Pull the rack out slightly so you can carefully pour the egg mixture over the top of the filled pie crust. Then, sprinkle the shredded cheese on the top of the quiche and slide the rack back into place.
Tip #2: Place a baking sheet underneath the quiche. Then, if it does spill over, you don’t need to clean the oven once you are done…Because no one has time for that!
Bake the quiche in the oven for 30 minutes at 350℉. Then, remove the quiche and add a thinly sliced Roma tomato on the top. (If you don’t like tomatoes, or just prefer to skip them, this step is optional.)
Admittedly, I’m not a huge fan of tomatoes, but my husband likes them. And I do love the pretty red Christmas-y color that it adds to the dish. After the quiche has been topped with tomatoes, return it to the oven and cook for an additional 20-30 minutes or until the middle is set and a toothpick comes out clean when placed in the center.
Serving the Quiche
Once the quiche is baked, let it cool for 15 minutes before slicing to serve. To store leftovers, simply place them in an airtight container and keep in the refrigerator for up to 3-4 days.
That’s it. Easy, peasy, huh? I hope you enjoyed my recipe for this easy Christmas morning quiche.
