Double Chocolate Chip Peppermint Cookies
Baking Christmas cookies is one of my favorite holiday traditions! I cherish all of the special memories made with my girls in the kitchen. Teaching them just as my mom taught me. I enjoy the sound of giggles shared between two sisters. And, of course, I love sampling all of our treats after a long day of hard work. After all, eating them is one of the best parts, isn’t it?
As my girls get older and our schedules get more hectic, it seems that is harder to find the time to bake as much as we used to. Despite all of the hustle and bustle of the season, we always find time to whip up a few of our favorites.
In addition to our favorites, I decided to try a brand new recipe this year. Double chocolate chip peppermint cookies. At first, I was a little bit nervous to try them. (Making a new recipe for the first time can always be a risk.) But WOW! These cookies are easy to make, and the flavor combination of the chocolate and the peppermint is like pure Christmas magic for your tastebuds.
And just in case you still aren’t sold, I will share this. You know these cookies are good when I catch my husband (who doesn’t like sweets) sneaking not one, but TWO with a glass of milk for breakfast! 😉
Ingredients for Double Chocolate Chip Peppermint Cookies
- 1 1/4 cups all-purpose flour
- 1/3 cup unsweetened cocoa powder
- 1/2 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1/2 cup unsalted butter (cold and cubed)
- 3/4 cup sugar
- 1 egg
- 1/4 teaspoon peppermint extract
- 1 cup milk chocolate chips
- 10 ounces Andes peppermint baking chips (1 bag)
Instructions for Double Chocolate Chip Peppermint Cookies
To begin, preheat the oven to 350℉ and line some cookie sheets with parchment paper.
Then, in a medium mixing bowl, stir together the flour, cocoa powder, baking powder, baking soda, and salt and set aside.
In another bowl, add the cold, cubed butter. Use a mixer to combine the butter and sugar, beating for 2-3 minutes or until the mixture is light and fluffy. Next, add the egg and peppermint extract. Beat again until combined.
Slowly add the dry ingredients into the butter and sugar mixture. Stir until just combined and mix in the chocolate chips.
Use a cookie scoop to form each cookie and roll the dough into a ball. Next, use a glass tumbler to slightly press and flatten each cookie. Then top each cookie with Andes peppermint baking chips.
*Note: The baking chips can sometimes be difficult to find (my grocery store was out when I baked these…sigh.) If you can’t find the peppermint baking chips, you can substitute the regular Andes peppermint candies. Just chop them into small pieces before using them to top the cookies.
Place the finished cookies in the oven and bake for 10 minutes, or until they are done and the middle is firm.
Let them cool for 5 – 10 minutes before transferring the cookies to a cooling rack and enjoy!
Christmas Cookies as Gifts
The best gifts are the ones you can eat! Double the recipe to make more for sharing this holiday season with neighbors, school teachers, or family and friends! Just place them in a pretty tin tied with a bow, or wrap them on a tray with other treats.
The cookies can also be put in an airtight container and stored in the freezer for later. If freezing, use a layer of wax paper between each stack of cookies. Remove them from the freezer to thaw a few hours before serving.

Double Chocolate Chip Peppermint Cookies
Ingredients
