Decadent Mini Brownie Trifles with Whipped Cream and Strawberries
I’ll admit it. I’m a chocoholic. And while I love receiving a big box of chocolates, I enjoy indulging in a homemade chocolatey dessert even more.
So ditch the box this Valentine’s Day, and grab a spoon! These bite-sized brownie trifles are the ultimate indulgence. Decadent, delicious, and perfect for any special occasion – or just because.
These mini brownie trifles are easy to make and guaranteed to steal your heart (and the heart of your special Valentine too!)
Ingredients for Mini Brownie Trifles
For the Brownies
- 2 cups granulated sugar
- 1 and ½ cups all-purpose flour
- 1 cup butter, melted
- 4 large eggs
- ½ cup cocoa powder
- 1 teaspoon vanilla extract
- ½ teaspoon baking powder
- ½ teaspoon salt
To Make the Whipped Cream*
- 2 cups cold heavy cream or heavy whipping cream
- 4 Tablespoons confectioners’ sugar
- 1 teaspoon vanilla extract
For the Berry Layer
- 1 pint fresh strawberries washed, tops removed, and quartered
*Whipped Cream recipe adapted from Sally’s Baking Addiction. This recipe has been doubled from the original and yields 4 cups of whipped cream.
How To Make Mini Brownie Trifles
Start by preheating your oven to 350℉ and generously grease a 9×13-inch pan.
Next, in a large mixing bowl, combine the granulated sugar, flour, melted butter, eggs, cocoa powder, vanilla, baking powder, and salt until well mixed.
Use a spatula to gently spread the brownie batter into your prepared baking pan. Bake in the preheated oven until done and a toothpick comes out clean when inserted in the middle of the brownies–about 20 to 30 minutes. Let the brownies cool for another 20 to 30 minutes before cutting into small bite-sized squares.
While the brownies cool, use a mixer fitted with a whisk attachment to make some homemade whipped cream.
Whip heavy cream, sugar, and vanilla extract on medium-high speed until medium peaks form, about 3–4 minutes. Be careful not to overmix! Then cover and place in the fridge until you’re ready to assemble your trifles.
How To Assemble Your Mini Trifle Desserts
These mini trifles might look complicated but they’re surprisingly easy to whip up! Grab your serving dishes and start with a layer of brownie bites, followed by fresh sliced strawberries, and whipped cream.
Repeat the layers and garnish with a spring of mint and shaved chocolate curls on top. Then you’re ready to indulge!
Can You Prepare Mini Brownie Trifles the Night Before
Like most recipes that include fresh berries, these mini brownie trifles are best when eaten shortly after they are assembled.
But, you can get everything ready beforehand. Just keep all the components separated in food storage containers in the fridge overnight. This way you’ll be able to quickly assemble the trifles just before serving them.
Other Time-Saving Recipe Tips
If you’re in a pinch for time here are a few other time-saving recipe tips:
Use a Boxed Brownie Mix: No time to make brownies from scratch? No problem. Use a boxed brownie mix for this recipe instead. Simply follow the baking directions on the back of the box.
Substitute Store-Bought Whipped Cream: While it’s not as good in my opinion, you can also substitute store-bought whipped cream in place of the homemade version.

Mini Brownie Trifles with Whipped Cream and Strawberries
Ingredients
For the Brownies
- 2 cups granulated sugar
- 1 and ½ cups all-purpose flour
- 1 cup butter, melted
- 4 large eggs
- ½ cup cocoa powder
- 1 teaspoon vanilla extract
- ½ teaspoon baking powder
- ½ teaspoon salt
For the Whipped Cream
- 2 cups cold heavy cream or heavy whipping cream
- 4 Tablespoons confectioners’ sugar
- 1 teaspoon vanilla extract
For the Berry Layer
- 1 pint fresh strawberries (washed, tops removed, and quartered)
Instructions
To Make the Brownies
- Preheat the oven to 350℉ and grease a 9x13-inch pan.
- In a large mixing bowl, combine the sugar, flour, melted butter, eggs, cocoa powder, vanilla, baking powder, and salt in a large bowl until well-mixed.
- Use a spatula to gently spread the batter into the prepared baking pan. Bake in the preheated oven until done and a toothpick comes out clean when inserted in the middle of the brownies–about 20 to 30 minutes. Let cool for another 20 to 30 minutes before slicing into small bite-sized squares.
To Make the Whipped Cream
- Be careful not to over-whip. If you accidentally over-whip, the cream looks curdled and heavy. To correct, carefully pour in a little bit more cold heavy cream, and fold it in gently by hand with a spatula until the whipped cream becomes smooth.
To Assemble the Mini Brownie Trifles
- Fill each serving dish with alternating layers of brownie bites, fresh, quartered strawberries, and whipped cream. Garnish each trifle with a sprig of fresh mint and serve immediately.
