The Secret To Easy-Peel Hard-Boiled Eggs
For the longest time, I struggled to peel hard-boiled eggs without them looking like something tragic from an episode of one of those “worst cooks” TV shows.
It wasn’t until recently that I discovered the secret to easy-peel hard-boiled eggs….distilled white vinegar!
The addition of vinegar to the water makes the eggs easier to peel. Why? Because the vinegar’s acid not only dissolves a bit of the calcium carbonate in the shell but also helps the whites of the eggs set faster.
How To Boil Your Eggs
Step 1
In a large stock pot, combine water with 1 teaspoon of vinegar and bring to a boil over high heat.
Step 2
Slowly add one dozen eggs to the boiling water. Lower the eggs into the water using a ladle or slotted spoon, being careful not to crack them. Then reduce the heat to a low boil, and cook for 14 minutes.
Step 3
Once the eggs have cooked, remove them from the hot water, and place them into an ice bath. Cool completely, about 15 minutes before peeling.
Tip: Running the hard-boiled eggs under cold running water as you’re peeling, helps the shell separate from the membrane and prevents divots in your egg whites.
Preparing The Ranch Deviled Eggs
Step 1: Hard Boil The Eggs
First, hard boil a half dozen eggs. After the eggs are cooked, let them cool before peeling them and cutting them in half lengthwise.
Step 2: Cut and Prep The Eggs
With a spoon, gently scoop out the yolks into a large mixing bowl, and set the rest of the egg halves aside.
Next, in a small skillet, cook two strips of bacon until crispy, about 6-8 minutes. Then carefully transfer the bacon to a plate lined with paper towels to absorb the excess grease and set it aside.
After the bacon is cool, crumble it into small pieces and reserve for the garnish.
(Note, this is optional if you don’t want to garnish your deviled eggs with bacon)
Step 3: Mix The Ranch Deviled Egg Filling
Add the mayonnaise, sour cream, Mrs. Wages® Ranch Dressing & Dip Mix, and Dijon mustard to the bowl with the egg yolks.
Then, use a fork to mash the mixture until the egg yolks are smooth, and the ingredients are well blended.
Tip: If you are having trouble getting the yolks completely smooth, you can put the deviled egg mixture in a food processor and pulse until all the lumps are gone.
Step 4: Pipe The Filling Into The Eggs
To finish the eggs, I spooned my mixture into a large cake-decorating bag. Then, using frosting tip #2110 I gently piped some of the ranch deviled egg mixture into each egg white half.
If you don’t have cake decorating supplies, you can use a plastic zipper bag instead. Just place the mixture into a bag, seal it, and use scissors to snip off a small corner on the bottom of the bag.
Or, if you would prefer to skip the piping altogether, you can simply spoon the mixture into the egg whites, too.
Step 5: Garnish and Enjoy!
To finish your ranch deviled eggs, sprinkle the top of the filling with crumbled bacon bits and fresh chopped chives.
Then dig in and enjoy!
Preparing The Guacamole Deviled Eggs
Steps 1 -2 Hard Boil, Cut, and Prep the Eggs
To make guacamole deviled eggs, repeat steps 1 and 2 as listed above.
Personally, I think bacon makes everything better, but as a reminder, you can skip adding a bacon garnish on top of your eggs if you wish.
Step 3: Mix The Guacamole Deviled Egg Filling
Seed, peel, and dice one ripe avocado. Then add the diced avocado, lime juice, and Mrs. Wages® Guacamole Seasoning Mix to the bowl with the egg yolks.
Next, use a fork to mash the mixture until the egg yolks are smooth, and the ingredients are well blended.
Steps 4-5: Pipe Filling Into The Eggs, Garnish, and Enjoy!
To finish the eggs, pipe some of the guacamole deviled egg mixture into each egg white half.
Then garnish with crumbled bacon bits and fresh chopped chives (as desired).
How To Serve And Store Your Deviled Eggs
To save time, you can hard boil the eggs the day in advance and store the whites and the yolks separately in air-tight food storage containers.
The filling is best fresh and I would recommend waiting to make both the ranch and guacamole deviled egg mixture until the day that they will be served.
The eggs can be covered with plastic wrap and chilled before serving. Once the deviled eggs are assembled, they are best eaten on the same day.
These deviled eggs are soo good, it’s hard to eat just one. So don’t be surprised if they disappear quickly!
But, in the event that you have leftovers, they can be stored in the fridge in an airtight food storage container for up to 3 days.
